I love to cook, but breakfast is something I really struggle with. I am not a morning person, so putting much effort into making a meal first thing in the morning isn’t something I look forward to. I decided to try making breakfast ahead of time, maybe the night before or even over the weekend to be able to enjoy throughout the week. I found some really great recipes and thought I’d share in the hopes of simplifying your mornings, too!

Freezer Breakfast Burritos from Damn Delicious. Not your average breakfast burrito -plus, these can be made up to a month in advance!

Slow Cooker Apple Cinnamon Steel Cut Oatmeal w/ Whipped Maple Cream from How Sweet Eats. She calls these oats “a hug in a bowl” and that’s actually what they look like. Apple, cinnamon, and maple are the perfect flavors for Fall mornings.

Healthy Egg Muffin recipe from Ashley Brooke Designs. These are gluten-free, and dairy-free if you use almond milk. I added cheese to ours at my kids’ request and they loved them!

Peanut Butter, Banana, and Honey Muffins from Two Peas and Their Pod. Sometimes muffins tend to be a glorified cupcake, but these are actually on the healthier side. Bonus: they freeze well!

Chewy Granola Bars w/ Almonds & Wild Blueberries from The Pioneer Woman. Protein-packed, easy to freeze for later, and one of the most portable breakfasts for when you’re in a rush.

Slow Cooker Cheesy Breakfast Potatoes from Damn Delicious. So warming & filling. Waking up to breakfast already made is the best way to wake up! If your slow cooker has a “WARM” setting, just start these the night before and let your slow cooker keep it warm until breakfast time!

Pumpkin Overnight Oats from Skinnytaste. Overnight oats are one of the easiest breakfasts to make ahead. And this time of year, I will take ALL the pumpkin spice things, please!
